When it’s cold outside, girl, what are you eating? You should be eating ramen and pho…. And we’re talking about the ramen noodle packs you used to stock-pile in your dorm room back in the day. We’re talking next-level, brothy, piping hot, packed full of toppings and vegetables GOOD QUALITY ramen, and delicious, slap-your-mama-good-pho.
Now, having spent several years living in Tokyo, I do believe I am qualified to write this article. I’m sorry I had to diss your beloved childhood nutrition-less meal. But, I have eaten a lot of ramen and pho in my day. After the past few surprising snow days here in the Rocket City, I found myself thinking about ramen, a popular brothy soup dish made popular in Japan, China, and Korea; and pho (pronounced fu, not foe) a Vietnamese soup made from a delicious broth and chock full of with fresh veggies. Here are some photos for you to compare the two. Note, there’s a different in the type of noodles used and there’s a huge difference in broth color.

Both are served piping hot, are extremely comforting, and are perfect dishes for the beautiful yet briskly cold days we are experiencing here in Huntsville.
